emzio's birthday cake craziness

It was my best mate Emmas birthday last week and as I was on nights I decided to cook tea when her, Sarah and I were all free. We had meatballs and pasta for tea and I made her some special cupcakes. Surprise surprise I found this on pinterest. Basically put your batter in the cases as normal then just stick an ice cream cone on top then bake until cooked. I topped mine with fudge and sugar sparkles in oir favourite colour green! Plus a candle which until she blew it out I had forgotten I had bought re-lighting candles for Stevens older brothers cake earlier in the year.

A few punk rock housewife failings

Well I have been putting up things that have worked well and I'm proud of but you have got to make mistakes somewhere right? Well, I have certainly learnt where I went wrong for when I try them next time.

Washing curtains... good god how women used wash and iron them regularly I don't have a clue. Its hard, like as they are so big you have to flip them over a few times to get the main creases out. Mine are still creased a wee bit but I have given up haha never again will I do my on curtains!.

Cheese making, now everything was going well until the final stages of stretching and heating but I soon realised when it says use 8 pints of milk use 8 pints of milk! It wont work properly!

The gingerbread mixture for my houses needs to be followed exactly, also reading the instructions for the rest would help. I was getting muddled up in my head. Next time I would portion out the dough into 4 to get an even thickness and not try to over use the small space in my kitchen.

Brownies!

Since Monday I've been wanting to make brownies they are Stevens favourite wait that isnt true its pancakes but I cant stand them! But anyway he does love my brownies, they are soft and gooey and really chocolately. I used to use a box mixture purely because of ease then the chef at work gave me his recipe and its perfect well I have had to tweak the cooking times but now its perfect and as I'm so nice I'm going to share it with you all!

Tink's Brownies
2 large eggs
8oz sugar
2oz butter - melted
3oz plain flour
3 tablespoons cocoa powder
1/2 teaspoon of vanilla extract
1/2 teaspoon baking powder
pinch of salt

Method:

Whisk the eggs and sugar until creamy, then pour in the melted butter and vanilla. mix thoroughly. Sieve the cocoa powder, flour, salt and baking powder into the mixture then fold gently. Put in a greased tin and bake for 30 minutes at 180 C.

Couldn' t be any easier! You could drizzle chocolate on top or add nuts when you add the flour.

If you try it let me know if it works for you!
